Sweet Potato BBQ Burger
4 servings | Prep Time: 35 minutes | Cook Time: 20-25 minutes

Juicy, flavorful, and 100% plant-based, this smoky bbq burger will change everything you thought you knew about veggie burgers. It’s topped with homemade sweet potato fries (made in an air fryer for maximum flavor and minimum grease) and a vibrant collard greens slaw for a flavor experience that is simultaneously smoky, sweet, bright, and rich.

For the Fries:
1 medium sweet potato (about 8oz)
2 teaspoons olive oil
½ teaspoon smoked paprika
½ teaspoon garlic powder
¼ teaspoon fine sea salt


For the Slaw:
2 tablespoons fresh lemon juice
1 tablespoon olive oil
1 garlic clove, minced or pressed
¼ teaspoon fine sea salt
1 bunch collard greens, finely shredded (about 4 lightly-packed cups)


For Serving:
4 Planet Based Foods Original Hemp Burgers
4 potato or plant-based brioche buns, lightly toasted (or substitute gluten free buns)
¼ cup plant-based mayonnaise (optional)
½ cup preferred hickory BBQ sauce


Directions:
  1. Preheat an air fryer to 390°F. Cut a small lengthwise slice from one side of sweet potato so it will sit flat on a cutting board. Cut lengthwise into ⅜” thick slabs, then cut those slabs lengthwise into ⅜” thick fries.
  2. In a medium bowl toss sweet potatoes with oil, paprika, garlic powder, and salt. Place in air fryer basket in an even layer and cook until tender and browned, 12-15 minutes, shaking the basket halfway through.
  3. In a medium bowl (you can use the same bowl you used to season the sweet potatoes), stir together lemon juice, oil, garlic, and salt. Add collards and toss well to coat with dressing.
  4. Heat a gas grill to 400°F with the lid closed for 10 minutes, or prepare a charcoal grill fire. Clean the grill grate well, then use tongs and an oiled paper towel to grease the grate.
  5. Grill burgers until browned and cooked through, 3-4 minutes per side.
  6. To serve, spread both sides of buns with mayo, if desired. Divide collards among bottom buns. Top collards with burgers, then fries, and a healthy drizzle of BBQ sauce. Top with bun tops and serve immediately.


Tips:
  • To make sweet potato fries in the oven, bake on a large sheet pan at 400°F for 20-25 minutes, stirring halfway through.
  • If you don’t have a grill, heat 1-2 teaspoons oil in a pan over low to medium heat and slowly cook for 3-4 minutes, flipping frequently until golden brown.
